Instructions:
1. In a large pot, melt butter over medium heat. Add chopped onion and cook until translucent.
2. Stir in flour and cook for 1-2 minutes.
3. Gradually add chicken broth, stirring constantly until thickened.
4. Add diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
5. Stir in diced ham and milk. Cook until heated through. Season with salt and pepper to taste.
Notes:
For a creamier soup, blend half of the soup and return to the pot.
