Ingredients:  

Main Ingredients

  • 2 cups split peas rinsed
  • 1 ham hock
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 stalks celery chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 8 cups chicken broth

Instructions: 

  • 1. In a large pot, combine split peas, ham hock, onion, garlic, carrots, celery, thyme, salt, pepper, and chicken broth.
  • 2. Bring to a boil, then reduce heat and simmer for about 1.5 hours, until peas are tender.
  • 3. Remove ham hock, shred the meat, and return it to the pot. Discard the bone.
  • 4. Adjust seasoning with salt and pepper if needed. Serve hot.

Notes:

This soup can be stored in the fridge for up to 3 days or frozen for up to 3 months.
