Instructions:
1. In a large pot, combine split peas, ham hock, onion, garlic, carrots, celery, thyme, salt, pepper, and chicken broth.
2. Bring to a boil, then reduce heat and simmer for about 1.5 hours, until peas are tender.
3. Remove ham hock, shred the meat, and return it to the pot. Discard the bone.
4. Adjust seasoning with salt and pepper if needed. Serve hot.
Notes:
This soup can be stored in the fridge for up to 3 days or frozen for up to 3 months.
