Ingredients:  

Main Ingredients

  • 2 cups Egusi (melon seeds) ground
  • 1 cup Palm oil
  • 1 large Onion chopped
  • 2 cups Spinach chopped
  • 1 pound Beef or Fish cut into pieces
  • 2 cups Stock or Water
  • to taste Salt
  • to taste Pepper

Instructions: 

  • 1. Blend the egusi seeds until smooth.
  • 2. Heat the palm oil in a pot over medium heat.
  • 3. Add the chopped onions and cook until translucent.
  • 4. Add the ground egusi and stir continuously for about 10 minutes.
  • 5. Add the meat or fish and cook for another 10 minutes.
  • 6. Pour in the stock or water and bring to a boil.
  • 7. Reduce the heat and simmer for 20 minutes.
  • 8. Add the chopped spinach, salt, and pepper. Cook for another 5 minutes.
  • 9. Serve hot with fufu or rice.

Notes:

Egusi soup is a staple in many West African homes. Feel free to adjust the ingredients to your taste.
