Egusi (melon seeds)

Palm oil

Instructions:
1. Blend the egusi seeds until smooth.
2. Heat the palm oil in a pot over medium heat.
3. Add the chopped onions and cook until translucent.
4. Add the ground egusi and stir continuously for about 10 minutes.
5. Add the meat or fish and cook for another 10 minutes.
6. Pour in the stock or water and bring to a boil.
7. Reduce the heat and simmer for 20 minutes.
8. Add the chopped spinach, salt, and pepper. Cook for another 5 minutes.
9. Serve hot with fufu or rice.
Notes:
Egusi soup is a staple in many West African homes. Feel free to adjust the ingredients to your taste.
