Ingredients:  

Turkey and Marinade

  • 1 whole Turkey about 12-14 pounds
  • 1/2 cup Olive Oil
  • 1/4 cup Lime Juice freshly squeezed
  • 4 cloves Garlic minced
  • 2 tbsp Paprika
  • 1 tbsp Cumin
  • 1 tbsp Salt
  • 1 tsp Black Pepper freshly ground
  • 1 tsp Oregano dried

Instructions: 

  • Preheat your oven to 325°F (165°C).
  • In a bowl, mix olive oil, lime juice, garlic, paprika, cumin, salt, black pepper, and oregano.
  • Rub the mixture all over the turkey, making sure to get under the skin and inside the cavity.
  • Place the turkey in a roasting pan and cover loosely with aluminum foil.
  • Roast the turkey in the preheated oven for about 3 hours, or until the internal temperature reaches 165°F (74°C).
  • Remove the foil during the last 30 minutes to allow the skin to brown.
  • Let the turkey rest for 20 minutes before carving.

Notes:

For extra flavor, marinate the turkey overnight in the refrigerator.
