Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into cubes
  • 2 tbsp Olive oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tbsp Aji amarillo paste
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 cup Chicken broth
  • 1 tbsp Lime juice freshly squeezed
  • to taste Salt
  • to taste Black pepper

Instructions: 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the pork cubes and brown on all sides. Remove and set aside.
  • In the same skillet, add the chopped onion and cook until softened.
  • Add the minced garlic, aji amarillo paste, cumin, and paprika. Cook for another minute.
  • Return the pork to the skillet and add the chicken broth. Bring to a simmer.
  • Reduce heat to low, cover, and cook for 30 minutes or until the pork is tender.
  • Stir in the lime juice and season with salt and black pepper to taste.
  • Serve hot with rice or potatoes.

Notes:

This dish pairs well with a side of fresh salad.
