Instructions:
Heat the olive oil in a large skillet over medium-high heat.
Add the pork cubes and brown on all sides. Remove and set aside.
In the same skillet, add the chopped onion and cook until softened.
Add the minced garlic, aji amarillo paste, cumin, and paprika. Cook for another minute.
Return the pork to the skillet and add the chicken broth. Bring to a simmer.
Reduce heat to low, cover, and cook for 30 minutes or until the pork is tender.
Stir in the lime juice and season with salt and black pepper to taste.
Serve hot with rice or potatoes.
Notes:
This dish pairs well with a side of fresh salad.
