Ingredients:  

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, minced
  • 2 cups long grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 tsp Cajun seasoning
  • 1 tsp thyme
  • 2 pcs bay leaves
  • to taste Salt and pepper

Instructions: 

  • 1. In a large pot, cook the chicken and sausage over medium heat until browned. Remove and set aside.
  • 2. In the same pot, sauté the onion, bell pepper, celery, and garlic until tender.
  • 3. Stir in the rice, chicken broth, diced tomatoes, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
  • 4. Reduce heat, cover, and simmer for 20 minutes.
  • 5. Add the shrimp, chicken, and sausage back to the pot. Cook until the shrimp is pink and cooked through, about 5-7 minutes.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

You can adjust the spice level by adding more or less Cajun seasoning.
