Ingredients:  

Main Ingredients

  • 1 lb Ground Lamb
  • 1 cup Carrots, diced
  • 1 cup Peas
  • 1 cup Corn
  • 1 cup Onion, diced
  • 2 tbsp Tomato Paste
  • 2 cups Beef Broth
  • 4 cups Mashed Potatoes
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • Preheat your oven to 400°F (200°C).
  • In a skillet, cook the ground lamb over medium heat until browned. Drain any excess fat.
  • Add the diced onions, carrots, peas, and corn to the skillet. Cook until the vegetables are tender.
  • Stir in the tomato paste and beef broth. Simmer until the mixture thickens.
  • Season with salt and black pepper to taste.
  • Transfer the meat mixture to a baking dish and spread it out evenly.
  • Spread the mashed potatoes over the meat mixture, making sure to cover it completely.
  • Bake in the preheated oven for 20 minutes, or until the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

For a vegetarian version, you can use lentils instead of ground lamb.
