Instructions:
Preheat your oven to 400°F (200°C).
In a skillet, cook the ground lamb over medium heat until browned. Drain any excess fat.
Add the diced onions, carrots, peas, and corn to the skillet. Cook until the vegetables are tender.
Stir in the tomato paste and beef broth. Simmer until the mixture thickens.
Season with salt and black pepper to taste.
Transfer the meat mixture to a baking dish and spread it out evenly.
Spread the mashed potatoes over the meat mixture, making sure to cover it completely.
Bake in the preheated oven for 20 minutes, or until the top is golden brown.
Let it cool for a few minutes before serving.
Notes:
For a vegetarian version, you can use lentils instead of ground lamb.
