Instructions:
1. Season the chuck roast with salt and black pepper.
2. Place the roast in the slow cooker.
3. Add the sliced onion, minced garlic, beef broth, carrots, potatoes, tomato paste, thyme, and rosemary.
4. Cover and cook on low for 8 hours or until the meat is tender.
5. Serve hot and enjoy!
Notes:
For a thicker gravy, you can remove some of the liquid and simmer it on the stove with a bit of cornstarch.
