Lemon Juice
Instructions:
Combine strawberries, sugar, and lemon juice in a saucepan.
Stir over low heat until the sugar is dissolved.
Increase heat to high, and bring the mixture to a rolling boil.
Boil, stirring often, until the mixture reaches 220°F (105°C).
Remove from heat and skim off any foam.
Ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
Seal jars and process in a boiling water bath for 10 minutes.
Notes:
Store in a cool, dark place. Refrigerate after opening.
