onion, chopped

red bell pepper, chopped

cloves
garlic, minced

ground cumin

paprika

ground coriander

chili flakes

diced tomatoes
400g can

eggs
to taste
salt and pepper

handful
fresh cilantro, chopped
for garnish

fresh parsley, chopped
for garnish
Instructions:
Heat olive oil in a skillet over medium heat.
Add chopped onion and bell pepper. Cook until softened.
Add minced garlic and spices. Cook for another minute.
Pour in diced tomatoes. Simmer for 10-15 minutes until thickened.
Make small wells in the sauce and crack the eggs into them.
Cover the skillet and cook until eggs are set to your liking.
Season with salt and pepper. Garnish with fresh cilantro and parsley.
Notes:
Serve with crusty bread for a complete meal.
