Instructions:
Preheat your waffle iron.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the egg yolks. Add the milk, oil, and vanilla extract, and mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter.
Pour the batter onto the preheated waffle iron and cook according to the manufacturer's instructions until golden brown.
Serve warm with your favorite toppings.
Notes:
For extra crispy waffles, let them cook a bit longer until they reach your desired crispiness.
