Cornmeal
for dusting
Instructions:
In a large bowl, combine flour, sugar, salt, and yeast.
Gradually add warm milk and melted butter. Mix until a soft dough forms.
Knead the dough on a floured surface for about 10 minutes.
Place the dough in a greased bowl, cover, and let rise until doubled in size, about 1 hour.
Roll out the dough to about 1/2 inch thickness. Cut into rounds using a round cutter.
Dust each round with cornmeal and let rise for another 30 minutes.
Heat a griddle over medium heat. Cook the muffins for about 7 minutes on each side or until golden brown.
Notes:
These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
