Ingredients:  

Main Ingredients

  • 1 lb Beef sirloin, thinly sliced
  • 4 slices Bacon, chopped
  • 2 cups Water
  • 1 cup Pinto beans, cooked
  • 1 cup Tomatillos, chopped
  • 2 cloves Garlic, minced
  • 1 unit Jalapeño, chopped
  • 1 unit Onion, chopped
  • 1 bunch Cilantro, chopped
  • to taste Salt
  • to taste Pepper

Instructions: 

  • 1. Cook the bacon in a large pot until crispy. Remove and set aside.
  • 2. In the same pot, add the beef and cook until browned.
  • 3. Blend tomatillos, garlic, jalapeño, and water until smooth. Pour into the pot.
  • 4. Add the cooked bacon, pinto beans, and chopped onion. Simmer for 30 minutes.
  • 5. Season with salt and pepper. Garnish with cilantro before serving.

Notes:

Serve with warm tortillas and lime wedges.
