Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 lb chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lime, juiced
  • 1 cup tortilla chips, crushed
  • 1/4 cup cilantro, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Stir in the cooked chicken, chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  • Stir in the lime juice and remove from heat.
  • Serve hot, topped with crushed tortilla chips and chopped cilantro.

Notes:

This soup is great with a side of avocado or a dollop of sour cream.
