Ingredients:  

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 2 cups Chicken broth
  • 1 cup Milk
  • 2 tbsp Butter
  • to taste Salt and pepper

Instructions: 

  • 1. In a pot, melt butter over medium heat. Add onions and cook until translucent.
  • 2. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • 3. Use a blender to puree the soup until smooth.
  • 4. Return soup to pot, stir in milk, and season with salt and pepper. Heat through but do not boil.

Notes:

For a richer soup, use heavy cream instead of milk.
