Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 cups Carrots chopped
  • 1 cup Celery chopped
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 8 cups Chicken Broth
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 2 tsp Dried Thyme
  • 1 cup Noodles optional

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned.
  • 2. Add the chopped carrots, celery, onion, and garlic. Cook until the vegetables are softened.
  • 3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 30 minutes.
  • 4. Add salt, pepper, and thyme. If using noodles, add them now and cook until tender.
  • 5. Remove the chicken pieces, shred the meat, and return it to the pot. Discard the bones.
  • 6. Serve hot and enjoy!

Notes:

This chicken soup is great for meal prep and can be stored in the fridge for up to 3 days.
