Instructions:
1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned.
2. Add the chopped carrots, celery, onion, and garlic. Cook until the vegetables are softened.
3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 30 minutes.
4. Add salt, pepper, and thyme. If using noodles, add them now and cook until tender.
5. Remove the chicken pieces, shred the meat, and return it to the pot. Discard the bones.
6. Serve hot and enjoy!
Notes:
This chicken soup is great for meal prep and can be stored in the fridge for up to 3 days.
