Ingredients:  

Main Ingredients

  • 2 pounds red potatoes cut into bite-sized pieces
  • 1/2 cup mayonnaise
  • 1/4 cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions: 

  • 1. Boil the red potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  • 2. In a mixing bowl, combine mayonnaise, dijon mustard, apple cider vinegar, salt, and black pepper.
  • 3. Add the cooled potatoes and chopped green onions to the bowl. Mix well to coat the potatoes evenly.
  • 4. Chill in the refrigerator for at least 1 hour before serving.

Notes:

Feel free to add other ingredients like celery or hard-boiled eggs for extra flavor.
