Instructions:
Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
Mix in the sugar, beaten egg, and vanilla extract. Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour last, and mix until just incorporated. Do not overmix.
Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove from oven and let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes:
These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
