Ingredients:  

Main Ingredients

  • 3 Bananas ripe and mashed
  • 1/3 cup Melted Butter
  • 1/2 cup Sugar
  • 1 Egg beaten
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 pinch Salt
  • 1.5 cups All-purpose Flour

Instructions: 

  • Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  • Mix in the sugar, beaten egg, and vanilla extract. Sprinkle the baking soda and salt over the mixture and mix in.
  • Add the flour last, and mix until just incorporated. Do not overmix.
  • Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove from oven and let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes:

These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
