Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, combine flour, baking soda, and salt.
In another bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
Add the flour mixture to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Fold in the chopped apples.
Pour batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes:
This apple bread is best served warm with a pat of butter.
