Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Onion, chopped
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 3 cups Potatoes, peeled and diced
  • 3 cups Chicken Broth
  • 2 cups Milk
  • 2 cups Cheddar Cheese, shredded
  • 1/4 cup All-purpose Flour
  • 1/4 cup Butter
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onion, carrots, and celery to the pot. Cook until vegetables are tender.
  • Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  • In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk until smooth. Cook until thickened.
  • Stir the milk mixture into the soup. Add the shredded cheddar cheese, salt, and pepper. Stir until cheese is melted and soup is heated through.
  • Serve hot and enjoy!

This soup is perfect for a cozy night in. Feel free to add your favorite burger toppings like bacon or pickles.
