Ingredients:

  • 4 cups potatoes, peeled and diced
  • 2 cups leeks, cleaned and sliced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions: 

  • 1. In a large pot, combine potatoes, leeks, and broth. Bring to a boil.
  • 2. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  • 3. Blend the soup until smooth using a blender.
  • 4. Stir in the heavy cream and season with salt and pepper to taste.
  • 5. Serve hot and enjoy!
