Ingredients:  

Main Ingredients

  • 500 g Green beans trimmed
  • 1 cup Cherry tomatoes halved
  • 1/4 cup Red onion thinly sliced
  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 clove Garlic minced
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions: 

  • 1. Bring a pot of water to a boil. Add green beans and cook for 3-5 minutes until tender-crisp. Drain and rinse under cold water.
  • 2. In a large bowl, combine green beans, cherry tomatoes, and red onion.
  • 3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper.
  • 4. Pour dressing over the vegetables and toss to coat. Serve chilled.

Notes:

Feel free to add some feta cheese or toasted almonds for extra flavor.
