Instructions:
1. Bring a pot of water to a boil. Add green beans and cook for 3-5 minutes until tender-crisp. Drain and rinse under cold water.
2. In a large bowl, combine green beans, cherry tomatoes, and red onion.
3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper.
4. Pour dressing over the vegetables and toss to coat. Serve chilled.
Notes:
Feel free to add some feta cheese or toasted almonds for extra flavor.
