Ingredients:  

Main Ingredients

  • 1 small red cabbage, shredded
  • 1 carrot, grated
  • 0.5 red onion, thinly sliced
  • 0.25 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions: 

  • In a large bowl, combine shredded cabbage, grated carrot, and sliced red onion.
  • In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and pepper.
  • Pour the dressing over the vegetables and toss to coat.
  • Let it sit for at least 10 minutes before serving to allow the flavors to meld.

Notes:

Great as a side dish for BBQs or as a topping for tacos.
