Ingredients:  

Main Ingredients

  • 1 can green beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can garbanzo beans drained and rinsed
  • 1/2 cup red onion finely chopped
  • 1/4 cup parsley chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • 1. In a large mixing bowl, combine the green beans, kidney beans, garbanzo beans, red onion, and parsley.
  • 2. In a small bowl, whisk together the olive oil, red wine vinegar, sugar, salt, and black pepper.
  • 3. Pour the dressing over the bean mixture and toss to coat.
  • 4. Chill in the refrigerator for at least 1 hour before serving.

Notes:

This salad tastes even better the next day after the flavors have melded together.
