Ingredients:  

Main Ingredients

  • 2 cups Cooked rice
  • 1 cup Mixed vegetables carrots, peas, corn
  • 2 tbsp Soy sauce
  • 2 tbsp Vegetable oil
  • 2 Eggs beaten
  • 2 cloves Garlic minced
  • 1 Onion chopped
  • to taste Salt
  • to taste Pepper

Instructions: 

  • Heat oil in a wok over medium-high heat.
  • Add garlic and onion, stir-fry until fragrant.
  • Add mixed vegetables, cook for 2-3 minutes.
  • Push vegetables to the side, pour beaten eggs, scramble until cooked.
  • Add cooked rice, soy sauce, salt, and pepper. Stir-fry for another 5 minutes.
  • Serve hot.

Notes:

Feel free to add any leftover meat or tofu for extra protein.
