Instructions:
Heat oil in a wok over medium-high heat.
Add garlic and onion, stir-fry until fragrant.
Add mixed vegetables, cook for 2-3 minutes.
Push vegetables to the side, pour beaten eggs, scramble until cooked.
Add cooked rice, soy sauce, salt, and pepper. Stir-fry for another 5 minutes.
Serve hot.
Notes:
Feel free to add any leftover meat or tofu for extra protein.
