Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 cups Rice
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Peas
  • 1 cup Carrots diced
  • 2 tbsp Vegetable oil
  • 4 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Turmeric
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste

Instructions: 

  • 1. Heat the oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Add the chicken pieces and brown them on all sides.
  • 4. Stir in the cumin, turmeric, salt, and pepper.
  • 5. Add the rice, chicken broth, peas, and carrots. Bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  • 7. Fluff the rice with a fork and serve hot.

Notes:

This dish is best served with a side of fresh salad or avocado slices.
