Instructions:
Heat oil in a large pot over medium heat.
Add onions and cook until golden brown.
Add garlic and ginger, cook for another minute.
Stir in cumin, coriander, turmeric, and chili powder. Cook for 2 minutes.
Add chicken pieces and cook until browned on all sides.
Add chopped tomatoes and cook until they soften.
Pour in coconut milk, bring to a simmer. Cook for 20 minutes.
Season with salt to taste.
Garnish with chopped cilantro before serving.
Notes:
Serve with rice or naan bread.
