Instructions:
Preheat your waffle iron.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg yolks, melted butter, and vanilla extract.
In a separate bowl, beat the egg whites until stiff peaks form.
Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the beaten egg whites.
Pour the batter onto the preheated waffle iron and cook until golden brown and crisp. Serve immediately.
Notes:
For extra crispy waffles, let them rest on a wire rack instead of stacking them.
