Ingredients:  

Waffle Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 cups Buttermilk
  • 2 large Eggs separated
  • 1/4 cup Butter melted
  • 1 teaspoon Vanilla extract

Instructions: 

  • Preheat your waffle iron.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, egg yolks, melted butter, and vanilla extract.
  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the beaten egg whites.
  • Pour the batter onto the preheated waffle iron and cook until golden brown and crisp. Serve immediately.

Notes:

For extra crispy waffles, let them rest on a wire rack instead of stacking them.
