Ingredients:  

Pancake Ingredients

  • 1 cup All-purpose flour
  • 2 tbsp Sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Almond milk or any plant-based milk
  • 1 tbsp Apple cider vinegar
  • 1 tsp Vanilla extract
  • 2 tbsp Vegetable oil

Instructions: 

  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, combine almond milk and apple cider vinegar. Let sit for a few minutes to curdle.
  • Add vanilla extract and vegetable oil to the milk mixture.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Notes:

Serve with maple syrup and fresh fruit.
