Instructions:
1. In a large pot, melt the butter over medium heat. Add the chopped onions and cook until soft.
2. Add the sliced mushrooms and cook until they release their juices and become tender.
3. Stir in the flour and paprika, and cook for another 2 minutes.
4. Gradually add the chicken broth, stirring constantly to avoid lumps. Bring to a boil, then reduce heat and simmer for 10 minutes.
5. Add the milk, salt, and pepper. Simmer for another 5 minutes.
6. Remove from heat and stir in the sour cream and fresh dill. Serve hot.
Notes:
This soup is perfect for a cozy night in. Serve with crusty bread for a complete meal.
