Ingredients:  

Main Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 2 tbsp flour
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions: 

  • Melt butter in a pot over medium heat. Add onion and garlic, cook until soft.
  • Add mushrooms, cook until they release their juices.
  • Stir in flour, cook for 1 minute.
  • Gradually add broth, stirring constantly. Bring to a boil, then simmer for 10 minutes.
  • Blend the soup until smooth. Return to pot, stir in cream, and heat through.
  • Season with salt and pepper. Garnish with parsley if desired.

Notes:

For a thicker soup, add more flour. For a thinner soup, add more broth.
