Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 tsp sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until soft.
  • Add chopped tomatoes and cook for 10 minutes.
  • Pour in vegetable broth, add sugar, salt, and pepper.
  • Simmer for 20 minutes.
  • Blend the soup until smooth.
  • Garnish with fresh basil leaves before serving.

Notes:

For a creamier texture, add a splash of cream before blending.
