Ingredients:  

Main Ingredients

  • 8 oz Pasta any short pasta
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup Feta cheese crumbled

Dressing

  • 1/4 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • 1 clove Garlic minced
  • to taste Salt and pepper

Instructions: 

  • 1. Cook the pasta according to the package instructions. Drain and rinse under cold water.
  • 2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  • 3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper.
  • 4. Pour the dressing over the pasta salad and toss to combine.
  • 5. Chill in the refrigerator for at least 30 minutes before serving.

Notes:

This salad can be made a day ahead and stored in the refrigerator.
