Ingredients:  

Main Ingredients

  • 3 pounds red potatoes cut into chunks
  • 1 cup mayonnaise
  • 1/4 cup dijon mustard
  • 1 cup celery chopped
  • 1/2 cup red onion chopped
  • 2 tablespoons fresh dill chopped
  • to taste salt and pepper

Instructions: 

  • 1. Boil potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  • 2. In a mixing bowl, combine mayonnaise, dijon mustard, celery, red onion, and fresh dill.
  • 3. Add cooled potatoes to the bowl and mix until well coated. Season with salt and pepper to taste.
  • 4. Chill in the refrigerator for at least 1 hour before serving.

Notes:

For a tangier salad, add a splash of vinegar.
