Ingredients:  

Main Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 1 Red Bell Pepper chopped
  • 1/4 cup Red Onion finely chopped
  • 1/4 cup Cilantro chopped
  • 2 tbsp Olive Oil
  • 1 Lime juiced
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper or to taste

Instructions: 

  • In a large mixing bowl, combine the black beans, corn, red bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately or refrigerate for later.

Notes:

Feel free to add avocado or jalapeño for an extra kick.
