Equipment

Ingredients:  

Custard

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup sugar
  • 1 tbsp cornstarch
  • 6 egg yolks
  • 1 tsp vanilla extract

Pastry

  • 1 package puff pastry thawed

Instructions: 

  • Preheat your oven to 400°F (200°C).
  • In a saucepan, combine heavy cream, milk, sugar, and cornstarch. Cook over medium heat, whisking constantly, until the mixture thickens.
  • Remove from heat and whisk in egg yolks and vanilla extract. Let it cool slightly.
  • Roll out the puff pastry and cut into circles to fit your muffin tin. Press the pastry into the tin.
  • Fill the pastry with the custard mixture.
  • Bake for 20-25 minutes, or until the tops are browned and the pastry is crispy.
  • Let the tarts cool before serving.

Best enjoyed fresh out of the oven!
