Instructions:
1. Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes.
2. Transfer roasted bones to a large pot. Add onion, garlic, celery, carrots, apple cider vinegar, and water.
3. Bring to a boil, then reduce heat to a simmer. Cook for 8-12 hours, skimming foam occasionally.
4. Strain broth through a fine-mesh strainer. Season with salt to taste.
5. Let cool and store in the refrigerator for up to 5 days or freeze for later use.
Notes:
For a richer flavor, you can also add herbs like thyme or rosemary.
