Super Bowl Casserole Recipe

Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 bag tortilla chips crushed
  • 1 cup sour cream
  • 1/4 cup chopped green onions

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
  • In a 9x13 inch baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then half of the shredded cheese.
  • Repeat the layers with the remaining chips, beef mixture, and cheese.
  • Bake in the preheated oven for 30 minutes, until the cheese is melted and bubbly.
  • Remove from oven and let cool for 5 minutes. Top with sour cream and green onions before serving.
