Ingredients:  

Main Ingredients

  • 4 cups leftover boiled potatoes, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix together the diced potatoes, shredded cheese, sour cream, milk, green onions, and bacon.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased baking dish.
  • Bake for 30 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Great for using up leftover potatoes!
