Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 bag tortilla chips, crushed

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
  • In a large casserole dish, layer half of the crushed tortilla chips.
  • Spread the beef mixture over the chips.
  • Top with sour cream, then sprinkle with shredded cheese.
  • Add the remaining crushed tortilla chips on top.
  • Bake in preheated oven for 30 minutes, until cheese is melted and bubbly.
