enchilada sauce

black beans, drained and rinsed

cup
corn kernels

cup
shredded cheese

corn tortillas
1
onion, chopped
2
cloves
garlic, minced
1
tbsp
olive oil
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add ground beef, cook until browned. Season with salt and pepper.
Stir in enchilada sauce, black beans, and corn. Simmer for 5 minutes.
Layer 4 tortillas in the bottom of a baking dish.
Spread half of the beef mixture over the tortillas.
Sprinkle half of the cheese over the beef mixture.
Repeat layers with remaining tortillas, beef mixture, and cheese.
Bake for 20 minutes, until cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes:
Feel free to add some jalapeños for extra spice!
