Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  • Add ground beef, cook until browned. Season with salt and pepper.
  • Stir in enchilada sauce, black beans, and corn. Simmer for 5 minutes.
  • Layer 4 tortillas in the bottom of a baking dish.
  • Spread half of the beef mixture over the tortillas.
  • Sprinkle half of the cheese over the beef mixture.
  • Repeat layers with remaining tortillas, beef mixture, and cheese.
  • Bake for 20 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add some jalapeños for extra spice!
