Ingredients:  

Main Ingredients

  • 2 cups Black-eyed peas cooked
  • 3 cups Squash diced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Cheddar cheese shredded
  • 1 cup Breadcrumbs
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the black-eyed peas, squash, onion, and garlic.
  • Add olive oil, salt, and pepper. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded cheddar cheese and breadcrumbs.
  • Bake for 40 minutes or until the top is golden brown and the squash is tender.
  • Let it cool for a few minutes before serving.
