Ingredients:  

Main Ingredients

  • 2 cups Quinoa, cooked
  • 2 cups Zucchini, sliced
  • 1 cup Cheddar cheese, shredded
  • 1 cup Milk
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine cooked quinoa, sliced zucchini, shredded cheddar cheese, milk, minced garlic, salt, and black pepper.
  • Transfer the mixture to a baking dish and spread it evenly.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is set.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add other veggies like bell peppers or mushrooms.
