Instructions:
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, sliced zucchini, shredded cheddar cheese, milk, minced garlic, salt, and black pepper.
Transfer the mixture to a baking dish and spread it evenly.
Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is set.
Let it cool for a few minutes before serving.

Feel free to add other veggies like bell peppers or mushrooms.
