Ingredients:

  • 1 lb ground pork
  • 1 cup cornmeal
  • 1 cup chicken broth
  • 1 cup shredded cheese
  • 1 can diced tomatoes drained
  • 1 can black beans drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground pork over medium heat until browned. Drain any excess fat.
  • In a mixing bowl, combine the cornmeal and chicken broth. Stir until smooth.
  • In a baking dish, layer the cooked pork, diced tomatoes, black beans, and cornmeal mixture.
  • Sprinkle the shredded cheese on top.
  • Bake in the preheated oven for 30-40 minutes, until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes:

This casserole is a great way to enjoy the flavors of tamales without all the work. Serve with a side of sour cream and salsa for extra flavor.
