Ingredients:

  • 2 cups polenta
  • 4 eggs
  • 1 cup milk
  • 1 cup shredded cheese cheddar or your choice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter for greasing

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Grease a baking dish with butter.
  • In a mixing bowl, whisk together the eggs and milk.
  • Add the polenta, shredded cheese, salt, and black pepper to the egg mixture. Stir until well combined.
  • Pour the mixture into the greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is set.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be made ahead and reheated. Great for meal prep!
