Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 cup Chopped onions
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Salsa
  • 2 cups Shredded cheese cheddar or Mexican blend
  • 1 package Taco seasoning
  • 1 cup Cooked rice

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onions to the skillet and cook until softened.
  • Stir in the black beans, corn, salsa, taco seasoning, and cooked rice. Mix well.
  • Transfer the mixture to a baking dish and top with shredded cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add more veggies or adjust the spice level to your liking.
