Instructions:
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onions to the skillet and cook until softened.
Stir in the black beans, corn, salsa, taco seasoning, and cooked rice. Mix well.
Transfer the mixture to a baking dish and top with shredded cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add more veggies or adjust the spice level to your liking.
