Instructions:
Preheat oven to 350°F (175°C).
In a greased 9x13-inch baking dish, layer the hash browns, cheese, ham, and green onions.
In a mixing bowl, combine beaten eggs, evaporated milk, pepper, and salt. Pour over the hash brown mixture.
Bake, uncovered, for 55-60 minutes or until a knife inserted near the center comes out clean.
Let stand for 5 minutes before serving.
Notes:
Feel free to add other vegetables or substitute the ham with bacon or sausage.
