Ingredients:  

Main Ingredients

  • 4 cups Yellow Squash, sliced
  • 1 cup Onion, chopped
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Crushed Crackers
  • 1 cup Sour Cream
  • 1/2 cup Butter, melted
  • to taste Salt and Pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large pot, boil the squash and onion until tender. Drain well.
  • In a mixing bowl, combine the squash, onion, cheese, crackers, sour cream, and melted butter. Mix well.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased baking dish.
  • Bake for 45 minutes or until the top is golden brown.
  • Let it cool slightly before serving. Enjoy!

Notes:

This casserole is a great side dish for any meal. You can also add a bit of cayenne pepper for a spicy kick.
