Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 packet Taco seasoning
  • 1 can Refried beans
  • 1 cup Salsa
  • 2 cups Shredded cheese
  • 6 large Flour tortillas
  • 1 can Enchilada sauce

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and water according to package instructions. Simmer for a few minutes.
  • In a mixing bowl, combine refried beans and salsa.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Place a tortilla in the dish, add a layer of the beef mixture, bean mixture, and cheese. Repeat layers, ending with a tortilla on top.
  • Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Bake in preheated oven for 30 minutes, or until cheese is bubbly and golden.

Notes:

Serve with sour cream, guacamole, and chopped cilantro if desired.
