Instructions:
Preheat oven to 375°F (190°C).
Cook spaghetti according to package instructions. Drain and set aside.
In a pot, heat olive oil over medium heat. Add onions, bell peppers, and garlic. Sauté until softened.
Add marinara sauce, diced tomatoes, salt, and black pepper. Stir well and simmer for 10 minutes.
Mix cooked spaghetti with the sauce mixture. Transfer to a baking dish.
Sprinkle vegan cheese on top.
Bake in preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add other veggies like mushrooms or zucchini for extra flavor.
